Roasted peaches with Mascarpone Olive Oil and Cream

This recipe is as summery as healthy because it has no sugar, more than the fruit itself and is loaded with nutrients provided by the peach. In addition, the healthy fat of Naturvie Olive Oil will not only help us sate, but also give a delicious taste.

ROASTED PEACHES WITH OLIVE OIL AND MASCARPONE CREAM

COMENSALES: 4

DIFFICULTY: easy

Ingredients:

  • 2 peaches

  • 1 tub of mascarpone cheese

  • Cinnamon powder

  • 2 dates (or 1 tablespoon of date syrup)

  • 75ml whole milk

  • Olive Oil ONE Mil Flores of Naturvie

Instructions:

Cut the peaches in half and remove the bone, being careful not to break the fruit. With a brush, rub them well with the Extra Virgin Olive Oil ONE Mil Flores and sprinkle a little cinnamon on top. Place them on a baking tray and roast for 1 hour at 180º. If they brown too much, you can cover them with aluminum foil.

While the peaches are roasting, prepare the mascarpone cream. For this, if you do not have date syrup, put a couple of dates in soaking and, when they are soft, crush them with a couple of tablespoons of water.

Put the mascarpone cheese and milk in a large bowl and add the dates. Mix well using rods until no lumps remain.

Serve some mascarpone cream in 4 bowls and place on top the baked peaches. Sprinkle some cinnamon on top and serve mild or cool.
