Fruit Cake and Sweet Figs Pate
Do you know that there is a way to make a sweet cake, without refined flours, sugar or yeast? Take note that today I tell you how to make a tender and tasty fruit cake.
120 g of oat flakes
One spoonful of Koronoiki Extra Virgin Olive Oil from Naturvie.
Fig Spread Naturvie.
Cinnamon to taste.
Strawberries to accompany.
Chop the raw almonds with the help of a powerful blender and reserve.
On the other hand, grind the oat flakes until you get a uniform flour.
We add the flour, 2 sliced bananas, 4 fresh eggs, 5 boneless and chopped dates, and cinnamon to taste. We beat everything well until we obtain a homogenous and viscous mixture.
Paint a silicon mold suitable for heating at high temperatures with a spoonful of Koronoiki Extra Virgin Olive Oil and add a good layer of the chopped almond that will remain at the base of the cake.
Pour the prepared mixture over the mold and on top add a little more ground almond.
Put the mold in the oven, preheated to 180º and let it bake for about 25 minutes.
After some time, we let it cool down, cut it in portions and serve it with, Naturvie’s Fig Spread, and some rolled strawberries.
The options that this cake gives us are many: we can add a layer of pure chocolate melted on top, peanut butter, or include nuts and small fruits like blueberries on top. It is also a good idea to add nuts and apples to the mix before baking.
It is a cake suitable for people with celiac disease (provided they make sure that it is a certified oatmeal without gluten), lactose intolerant and vegetarian.
